Harvest: Handpicked in bins on three different dates, followed by classification and selection of grapes.
Vinification/Fermentation: The grapes are harvested on different dates, with approximately 30 days between the first and last harvest. This allows us to obtain wines with markedly different nuances. Alcoholic fermentation takes place in concrete vessels. Three weeks of maceration in contact with the skins. Malolactic fermentation in contact with fine lees.
Maturation: Aged in first and second-use French oak barrels for 12 months.
Description: Intense red color, with aromas of black fruits and berries. Exotic and spicy notes with soft tannins. Flavors of cherry and ripe plums, perfectly balanced. Aged for a long time in first and second-use French oak barrels for 12 months. Ideal for pairing with the intense flavors of red meats, cured cheeses, and game stews.
