Harvest: Handpicked in individual bins, followed by cluster selection. We determine the optimal harvest point to achieve a balance of expression and acidity.
Production: The grapes are harvested on different dates, with approximately 30 days between the first and last harvest, allowing us to obtain wines with markedly different nuances.
Fermentation: Alcoholic fermentation takes place in concrete vessels. Three weeks of maceration in contact with the skins. Malolactic fermentation in contact with fine lees.
Maturation: Aged in second-use barrels for 6 months.
Description: Fresh wine with very present and pleasant tannins that enhance the fruit. Balanced acidity. Different harvests with a 30-day difference allow for achieving distinctly marked nuances. Aged for 6 months in second-use French oak barrels.
