Intense, attractive and perfect balance of the Uco Valley Terroir between fruit and its complexity. Subtle wood with characteristics of green peppers, black pepper and mineral flavors. Vineyard: Our Gualtallary estate planted with Cabernet Sauvignon 20 years ago. Its soil is loamy-sandystony. The irrigation system uses meltwater from the Andes Mountains. The result is small berries (grape grains) and low-yield plants per hectare that translate into wines of great concentration and minerality. An old vineyard is located in San Carlos. There are 15 hectares of Malbec and Cabernet Sauvignon, with plants that average 50 years. These vineyards provide a great quality of fruit. Its soils have an intermediate stony strip that allows greater drainage and results in a good density of flavors.
Variety: 100% Cabernet Sauvignon.

Altitude: It comes from 2 different vineyards: San José at 1050 m.a.s.l. and Gualtallary at 1200 m.a.s.l.
Vintage: Manual in bines, on three different dates after selection of tape clusters.
Elaboration: Both farms are harvested separately according to their degree of maturity. San José usually reaches its optimum point a few weeks before Gualtallary, due to the great height of this estate, so it begins in the latter in the first days of April and the harvest is closed, as every year entering the grapes from Gualtallary. Both wines are kept separate until the oak maturation is over, when the Assemblage is made, which will be presented in the bottle.
Fermentation: Alcoholic in vessels. Three weeks of maceration in contact with pomace. Malolactic fermentation in contact with fine erasures.
Variety: 100% Cabernet Sauvignon.
Maturation: In French Oak barrels of First and Second Use for 8 months, then 6 months in the bottle inside the cellar.
Alcohol 14% - Sugar 2,27 – Total acidity 5,06 - PH 3,70.
